Before Spanish conquistadores (Spanish explorer soldiers) arrived in the Aztec capital of Tenochtitlan (now known as Mexico City), the diet of the Mexican population mainly consisted of corn-based dishes with chillies and herbs, and many times complemented with beans and tomatoes. However, the Spanish soldiers brought ingredients like rice, beef, pork, chicken, wine, garlic and onions. These ingredients were then combined with the ingredients found in pre-Columbian Mexico like chocolate, maize, tomato, vanilla, avocado, guava, papaya, pineapple, chilli peppers, beans, squash, sweet potato, peanuts, fish and turkey.
This resulted in one of the earliest forms of fusion cooking and also a taste experience of note for the various groups that played a role in bringing these wildly different ingredients together. Some of the most popular Mexican dishes have also made its way out of Mexico and you can now find meals like enchiladas and tacos at your local restaurant, even here in South Africa.
