A state of the art teaching kitchen, a demonstration kitchen, a fine dining restaurant, an outdoor cooking facility to teach students the art of bush cooking, and a tea garden forms part of the campus. Other facilities include lecture rooms, a swimming pool, a lounge, and a venue for hosting events.
What does the diploma course include?
The 18 month course at the hotel
college includes theoretical and practical training
in all disciplines related to hotel and restaurant
chef work, as well as catering and bakery. The course
also entails a Cape Wine Academy certificate course to compliment
the culinary curriculum. Students can obtain an additional
diploma in Patisserie, which is extremely relevant to any
career in bakery and catering. As if not enough, students
can also get a THETA qualification when they meet the requirements
as set out by Prue Leith and THETA.
Practical experience is gained through:
Work at The
Odd Plate Restaurant in all sections of the kitchen
and front of house.
Catering events hosted offsite.
A two month internship program where students have the opportunity to work in selected top class restaurants, hotels and lodges in South Africa and other countries, such as Ireland and Britain.
Practical training in the teaching kitchen.
Students also attend classes and have the opportunity to meet some of the finest chefs and food personalities in South Africa.

All aspects of working in and managing a restaurant including bartending, table setting, food serving, welcoming guests, budgeting, stocktaking etc.
All aspects of chef work, including station management positions such as the Rotisseur, Poissonier, Garde Manger, Saucier, Entremetier, Grillardin, Potager, Friturier, Boucher, and Patissier.
CV and interview preparation to help students find suitable jobs at excellent employers.
Financial aspects.
At the Odd
Plate restaurant, students also gain experience as the
Aboyeur and Hotel de Maitre D. They learn to prepare for
the role of Chef de Cuisine and Sous Chef. The exposure
and extensive training in all the above, provide students
an excellent basis to start their careers as chefs in reputable
culinary establishments.
The
Prue Leith Hotel College diploma course stretches over
three semesters. The first semester is focused on the basics
of classical cookery and entails lecture attendance and
training in the demonstration kitchen. Students also work
in the Odd
Plate restaurant during this semester.
The second semester includes more practical experience with exposure to catering and more restaurant work where students get a balanced training in the cold and hot kitchen, the front of restaurant, and the patisserie division.
Students spend the third and final semester at one of the
selected hotels, lodges or restaurants where they have the
opportunity to learn under acclaimed chefs and caterers.
They also attend the wine course and gain more experience
at the Prue
Leith campus as well.
